About Victoire Boulangerie
Victoire Boulangerie has traded from its longtime Darling Street home since 1985, more than 40 years. Founded by French master baker Myriam Cordellier-Wever, the bakery built its name on classic levain and supplied some of Sydney's best-known kitchens.
Following Myriam's retirement, Victoire continues under the care of Grace and Hoon at its longtime Darling Street home. Hoon spent four years baking alongside Myriam before taking on the bakery, the kind of handover that keeps a method alive rather than a logo.
