Victoire Boulangerie: The Quiet Handover Keeping Rozelle's Levain Alive

At 7:30am on 22 July, I was the first customer through the door at Victoire Boulangerie. I left with a levain and an olive bread stick. The levain carried clean lame work, a deeply coloured crust and the sort of shape that tells you the baker still has a hand on every loaf.

A bakery on Darling Street since 1985

Victoire has traded on Darling Street since 1985. The shopfront still carries that history in plain view. Myriam Cordellier-Wever built the bakery around classic levain and traditional French baking, and supplied some of Sydney's best-known kitchens over the years.

My own connection goes back to the period when Matthias was selling MIWE ovens directly in Australia. I met Myriam during that time, and my first MIWE came through Matthias. Seeing the same make of deck oven still at work in Rozelle closes a long professional circle.

Succession done hand to hand

Myriam has retired. Grace and Hoon now operate Victoire from the original Rozelle shop. Hoon spent four years baking alongside Myriam before the handover, within six years at Victoire in total. Grace and Hoon have been operating the bakery for about two years.

That matters. A bakery can keep its name after a change of hands and still lose its method. Victoire's story is different. The knowledge moved with the people who had worked beside the founder, and the oven, products and daily rhythm remained part of the handover.

The MIWE deck is still part of the bake

Hoon confirmed that the MIWE oven remains in service. A deck oven gives the baker direct control over top and bottom heat and a strong baking surface. In practice, that helps a loaf set, lift and colour with the consistency a small craft range depends on.

The crust and crumb are the useful proof. The levain I bought showed a firm, even bake across the scored surface, then opened into a well developed crumb when sliced.
